Okay so far this is probably my favorite week and least favorite week. 
Why is it my favorite - because if you don't love pizza you are not human!
Why is it my least favorite week - because Jeff and I decided to do a cleanse this week and aren't allowed to have stuff that remotely even relates to pizza! haha I did take a bite though just for the "testing" purposes!

This week got a two thumbs up from my boys. They loved the pizza! I gave the dough a 10+ and the sauce a 3 but since I decided to add some oregano and some salt and pepper and a little more garlic then called for I was able to make it pretty good. I ended up doing mozzerella cheese and just hamburger on the pizza for the boys and since there was so much dough I made two individual pizza's for my boys. They loved it and Jeff and I both had a bite and really enjoyed it.

Alright, I must apologize to my dear friends of my Bake 52 group. I am behind with this post and I do apologize. We are right in the middle of getting ready to move and between a 2 year-old, a 1 year-old and trying to get things done, life has been hectic. So, the next few weeks might be a little belated but I must say that I will make time to post (even if I'm 4 days late) haha....

I can't believe we are already into week 6. I'm shocked actually. It seems like just yesterday we started baking. This week was hosted by my friend Jennifer over at Zolly Zoo. You can find the link to her baking blog by clicking on this link. Or you can connect to it under my list of friends.

Bread for me is sometimes hard to make. I have mastered my mom's rolls and I can tell you they are delightful! I however, have not mastered the technique  of making bread or regular rolls non-cement like. For some reason when I follow a normal bread recipe they turn out a little dense and I hate that. One of these days (when I actually have a standing mixer) I will be able to make delicious melt-in-your-mouth bread. I am just going to try something I normally do and not always follow the exact recipe.

This bread was good and I liked it, but after a day or two, I could have used it to hammer in a few things. My husband picked up the loaf after we got home from being out of town and said, "wow this is hard as a rock". Needless to say it got thrown aways. I liked making the bread but next time I might try something different. I did however, enjoy the braiding of the bread :D

Let's try this again shall we. I have typed this twice and it hasn't posted, so we are trying again. First of all, I have no pictures, my camera (not my phone camera that I usually use) crapped the bed on me so I am left with no pictures this week. Frankly I'm really upset because I had put the chocolate chips on top to add design to the treat but instead I am left with nothing to show for it.

Jesse hosted this week and you can find the recipe and instructions on her blog. When I first saw that she posted this recipe my first inital reaction was "oh boy my husband is going to kill me". Then after much talkin on our little forum I decided to use just one can of sweetened condense milk. I diluted it with a little bit of milk to thin it out a bit and they turned out awesome!

I only took a few bites, but my husband and boys loved them! They were a hit.
 
Alright, this was a tough one to make for me - main reason - my son broke his collarbone right in the middle of me getting everything together and I spent 5 hours with him in two different hospitals (thanks BCBS insurance I hate you). Another reason - the next morning I realized I had forgot one HUGE ingredient - THE CREAM CHEESE! Yes ladies and gentleman, I forgot the Cream Cheese for the Light New York CHEESEcake. Needless to say it still turned out pretty good and my husband said this - "D-LISH!" when he first tasted it.

This week's host was Talesha and you can find the recipe and directions on her blog. I was so excited to get this recipe because Cheesecake is my ABSOLUTE FAVORITE and frankly I could eat it all the time - I did with my first pregnancy! haha But I'm so upset at myself that I forgot a key ingredient. I guess it was one of those "mom" moments where your kids come first, blah blah blah hahahaha I love little guy and he got a big piece after I finally finished it (14 hours after I had started) and he tried to enjoy it but didn't like it as much as his dad.

Some fun notes making this tho - I FINALLY got to use the Food Processor we got for our wedding two years ago. You're probably thinking, "you are just barely using it?" Well, frankly - yes. I had a hard time figuring out how to use it, so i just put it in storage and we also didn't have a lot of room, so I had to store it. I loved it though, I was so excited to use it and finally figure out how to work it. :D Second of all, I used the springform pan that I bought a couple weeks ago and that was fun. Lastly, I actually made the yogurt cheese. I was skeptical about this because I didn't think it would actually work since I didn't have a wire mesh drainer, but it did! How exciting!!

Thank you again Talesha for hosting. It didn't work out as well as I had hoped, but when you have a 2 year-old and a 1 year-old something is going to happen sooner or later and I doubt it's the last time we ever visit an x-ray tech haha.

Well I have come to the conclusion after making these cupcakes that I still don't like chocolate. Yes, you heard me, and you can pick your chin up off the desk now. And before I continue you are probably thinking, why in the hell did she choose a super chocolate cake for her week - well frankly because my husband LOVES chocolate and the week I host, it just happens to be his birthday week so it completely worked out!

Anyways, back to the cupcakes. YUM! (minus the chocolate). I loved these cupcakes and I'm not a huge cake person. I absolutely loved the cupcake mix and probably will be tweaking the cream filling a little bit, but overall they were a huge success. My 2 year-old also loved the fact that he got to taste the batter after it was made. He kept saying "bite, bite" just so he could get a taste.

Amanda was our host this week and she chose a great recipe. You can find it on herblogsite. Thank you Amanda for chosing a great treat this week (and fattening!). Jeff tooke them to work and gave them to my best friend Becky whom he works with and they were literally gone within five minutes!!! They were a hit!

One trick I did learn though - before you cut it down the middle, make sure the cake has cooled for a good 5 hours or so. I cut them for a picture after 24 hours and they worked perfectly!!!

 
Well, we made it through the second week and I must say - pleasant surprise!

When I first saw that host Valerie had chose Bran Muffins I was like my 2 year-old son, "ewwwwww", but since I am a trooper when it comes to baking, I thought "why not" and bought the ingredients. Bran muffins in my mind are those dirt gross muffins that no one wants to eat unless you are 80 years-old and need to make your daily trip to the bathroom. Well, I was wrong. Bran Muffins are good. In fact, my whole family loved them! Mine didn't turn out as fluffy as I would have like them too, but add a little spread of butter over each side and you have a delicious muffin to enjoy for a snack or with your breakfast. The only thing different I would have done is use craisins or chocolate chips instead of raisins. I am out-voted in my household when it comes to raisins, but I'm the one cooking so I do what I want! haha

Here are a few pictures of my experience with Bran Muffins!

 
_Well its our first post in our Bake 52 Group. Clare was our host this week and she chose Quiche. There were several different choices for Quiche, but I decided to go with Quiche Lorraine. But since I didn't have the right kind of cheese, I opted for Pepper Jack (my husband is a spicy guy). The only thing different I would do with this is make the crust I normally make. I tried using a crust that incorporated cream cheese in it and it was a little too sweet for me. Next time I will use my original pie crust that I have used for a long time (recipe from my mom). I do have to say though that even though I have like mini-quiches in the past that are made by professionals, I probably wont make this recipe again. I am not a huge fan of it and will stick with my fritata. I have a great recipe and will post it in on one of my other pages in the future.

Here are some fun pictures of my first ever Quiche. Like I said, I probably will never make this again but you never know. I'm glad I am doing this group though because it is fun and I look forward each week to see what creations we all come up with. Thanks again Clare for hosting this week. Besides the texture it was pretty good. I added Bacon which adds an extra bonus because bacon is good on everything! Enjoy!
