YUM! You tell me we are making pancakes and my household gets super excited! I made so many of these delicious treats I have them wrapped individually and frozen for when my kids need a quick breakfast treat :D My boys - all 3 of them love pancakes and who could resist making breakfast - the most important meal of the day.

I ended up adding strawberries to my classical pancakes and then made a strawberry-wine (non alcoholic) reduction maple syrup. Talk about delicious. I could have used the syrup over a banana sundae!! I'm not going to lie though - I will probably make this syrup again with my wine I have in the fridge instead of the cooking wine. I bet it will taste great and to be honest a lot of the alcohol will cook off in the pan.

Here are a few pictures from my baking the pancakes and syrup. For some reason I ended up adding a little milk to make my batter a little thinner because my buttermilk was being obnoxious and made my batter thick. All-in-all though the pancakes were wonderful!

Well, we made it through the second week and I must say - pleasant surprise!

When I first saw that host Valerie had chose Bran Muffins I was like my 2 year-old son, "ewwwwww", but since I am a trooper when it comes to baking, I thought "why not" and bought the ingredients. Bran muffins in my mind are those dirt gross muffins that no one wants to eat unless you are 80 years-old and need to make your daily trip to the bathroom. Well, I was wrong. Bran Muffins are good. In fact, my whole family loved them! Mine didn't turn out as fluffy as I would have like them too, but add a little spread of butter over each side and you have a delicious muffin to enjoy for a snack or with your breakfast. The only thing different I would have done is use craisins or chocolate chips instead of raisins. I am out-voted in my household when it comes to raisins, but I'm the one cooking so I do what I want! haha

Here are a few pictures of my experience with Bran Muffins!

 
_Well its our first post in our Bake 52 Group. Clare was our host this week and she chose Quiche. There were several different choices for Quiche, but I decided to go with Quiche Lorraine. But since I didn't have the right kind of cheese, I opted for Pepper Jack (my husband is a spicy guy). The only thing different I would do with this is make the crust I normally make. I tried using a crust that incorporated cream cheese in it and it was a little too sweet for me. Next time I will use my original pie crust that I have used for a long time (recipe from my mom). I do have to say though that even though I have like mini-quiches in the past that are made by professionals, I probably wont make this recipe again. I am not a huge fan of it and will stick with my fritata. I have a great recipe and will post it in on one of my other pages in the future.

Here are some fun pictures of my first ever Quiche. Like I said, I probably will never make this again but you never know. I'm glad I am doing this group though because it is fun and I look forward each week to see what creations we all come up with. Thanks again Clare for hosting this week. Besides the texture it was pretty good. I added Bacon which adds an extra bonus because bacon is good on everything! Enjoy!
